Woke up 8.20.. 15th-day of the fast.. stayed in bed longer.. 11:30 shower, pray, get out.. the weather was good today.Β  I went to buy eggs downstairs but the shop guy was closed. I only saw him open once all this quarantine, last time he didn’t have the biscuit that I love. Now he’s closed..Β  why is he closed! so annoying. I was one egg short today. Tesco doesn’t have any eggs left either.. and I want my eggs!

It’s 23:46 now and I am feeding the Saheri.. Chicken and oats..Β  Long V- Day Weekend and I aim to complete my ebook this weekend.. that will be a quarantine ebook hopefully.

Today’s Dinner.

Alu aur Palak (Potato and Spinach)

4 x Large Potatos

1 big pack of Spinach (more the better)

1 Small Onion Dalli

3 Teaspoons of Oil (more the better)

1 and a half Tea Spoons of Red Chilli Powder

1 and a half Tea Spoon of Salt ( Or depends on how much you prefer)

Half Teaspoon of Turmeric

3 x Cloves of Garlic

3 x Cloves of Garlic size Ginger

Chop Onion, Peal Potatoes.. Take a Sauce Pan, add 3 Teaspoons of Oil on a medium fire stove, add Onions first then Potatoes, let them cook for 2 minutes.. then add, 1 and half spoon of Chilli Powder, 1 and a half Spoon of Salt, add half a teaspoon of Turmeric, then add peeled and crushed Ginger and Garlic.

Mix it well, let it cook for about 10 minutes.. in the meantime, wash your Spinich when you see potatoes seemed a bit done, add spinach and cover it.

Mix it for every 5 minutes, taste the food, if you need more Salt or a bit more Chilli powder, do add them.

20 or 25 min max.. when you see the potatoes are cooked and Spinich had released all its juices.. that means it’s done. You would start to smell the fresh Spinich cooked. Don’t forget to turn the fan on and shut the windows to keep away your nosy neighbors.

To go with that, take a medium size sauce pan, add 1 cup of white or brown rice, add 1 and half glass of water if it’s white rice or 2 or 2 and half glasses of water if it’s brown rice, add a tea spoon of Salt and let the rice boil for 20 minutes.

The food is ready to serve.Β  Β Spinach and Rice.

You can add a couple washed eggs in the rice before boiling or boil eggs separately.

It goes really well with Hot Rice, Spinach, Potato and Boiled Eggs.
